Capsicum Rice Recipe - How To Make Capsicum Rice/Bell Pepper Rice:


Capsicum rice recipe is one of the capsicum recipes which has nice aroma and fantastic flavor. My hubby does not like capsicum. He used to put it aside even while having Pizza. As usual, he put the the capsicum pieces away and ate the rice alone. I gave in the same way for my kid too since it might be spicy for him. Even with the capsicums removed from the capsicum rice, the taste was fantastic. When I asked hubby not to ignore the pieces to retain the taste, he told me that the rice itself has the flavor and tastes very good. Let us see the health benefits of capsicum and learn how to make capsicum rice.

Ingredients:

  • Cooked Plain Rice/Basmati Rice - 200g(should be non sticky)
  • Capsicum -1 large chopped
  • Carrot -1 chopped(optional)
  • Big onion - 1 chopped
  • Grated coconut - 1 tsp(optional)
  • Green chilli - 1 or 2
  • Ginger Garlic paste - 1 tsp
  • Black pepper Powder - 1/4 - 1/2 tsp
  • Salt - As required
  • Ghee - 1 tsp(optional, but gives nice aroma and rich taste.)
  • Cashew nuts - 8 - 10(optional, but gives nice aroma and rich taste.)

  • To Temper

  • Mustard seeds - 1 tsp
  • Urad dal - 1/2 tsp
  • Cumin seeds - 1 tsp
  • Cinnamon - 1/4 inch(optional)
  • Cloves - 1(optional)
  • Curry leaves - few
  • Oil/Butter - 2 tsp(Butter is preferred)

  • To Garnish

  • Coriander leaves - 1 tbsp finely chopped



Instructions:


1. Spread the cooked rice in a wide plate and separate the grains with a fork. Keep it aside.

2. Heat Butter/oil in a pan, add mustard seeds. Allow it to splutter. Add urad dal, cumin seeds, cinnamon, cloves and curry leaves. Saute for a minute.

3. Add big onions, carrot(optional), green chilli and ginger garlic paste. Saute till the onion turns translucent and carrot gets semi cooked if you have added it.

4. Add chopped capsicum and saute for 4 - 5 minutes in low flame. It should be semi cooked and not fully cooked. Take care not to burn it.

5. Add cooked rice, grated coconut and salt. Mix well and cook for another 2 minutes in low flame. Stir continuously. Switch off the stove.

6. Heat ghee in a pan and roast the cashews till they become golden brown color.

7.  Add it to the capsicum rice we prepared. Sprinkle pepper powder as much as you like(optional). Mix well.

Serve it hot with fryums and raitha.

Notes:

1. Though coconut is optional, I would recommend adding it. Do not add more than the mentioned measurement.

2. Adding carrot will make the capsicum rice more colorful.

3. Do not add too much of pepper powder as it will change the taste of the rice.

4. Butter gives nice flavor to the rice. You can replace it with oil if you are health conscious. But add it if you preparing for guests :)
