Aloo Gobi - Aloo Gobi Masala Dry & Gravy Recipe

Yesterday I tried Aloo Gobi Masala for dinner as side dish for chapathi. It came out very well and it became a super hit side dish. My hubby and kid loved it very much. I also enjoyed Aloo Gobi very much. There is nothing to say much. It is a must try recipe. Aloo gobi masala recipe is a very simple one. The ingredients of Aloo Gobi Recipe will be mostly available always at my home. Hope you will also have it. The only thing is you should buy potato and Gobi to make it. There is no special ingredient required to make Aloo Gobi Masala.

Aloo Gobi Masala Recipe

Aloo Gobi Masala - Dry and Gravy

Ingredients:

  • Cauliflower/Gobi- 1 Medium size
  • Potato - 3 
  • Onion - 1 very finely chopped
  • Tomato - 1 very finely chopped
  • Ginger Garlic Paste -1 tsp
  • Kasthuri Methi - 1 tsp(optional)
  • Coriander Leaves - 1 tsp
Powders:
  • Red Chilli powder - 1 to 2 tsp
  • Turmeric powder - A pinch
  • Coriander powder - 2 tsp(optional)
  • Salt - As required
  • Garam masala - 1 tsp
To Temper:
  • Oil - 2 tbsp
  • Jeera/Cumin seeds - 1.5 tsp
  • Bay leaf - 1
  • Clove - 1
  • Cinnamon - 1
  • Cardamom - 1




Instructions:


1. Clean the potatoes and pressure cook them with required water for 3 whistles in high flame.

2. Cut the cauliflower florets and put them in boiling water with a pinch of turmeric powder and salt. Switch off the stove once the water is well boiled. Let the cauliflower florets stay in the hot water atleast for 5 minutes to kill the worms and germs.



3. Take the cooked potatoes and peel off the skin. Cut them into medium size cubes and set aside.

4. Heat oil in a pan and add cumin seeds. Allow cumin seeds to crackle.

5. Add bay leaf, clove, cinnamon and cardamom and fry for few seconds. This step is purely optional. But I will tell you that these spices take Aloo Gobi much more tasty with nice aroma. This is very important step to make Aloo Gobi in restaurant style. Add whatever spices you have from the above mentioned list.




6. Add ginger garlic paste and fry till the raw smell goes off.

7. Add finely chopped onions and fry well till they turn golden brown color.




8. Add finely chopped tomatoes and cook well till they turn like tomato puree.




9. Add turmeric powder, red chilli powder, coriander powder, garam masala powder and mix well.

10. Add cauliflower and potato cubes and mix well.

11. Add required water little by little and stir well. Aloo and Gobi should absorb the masala very well. Add Kasthuri Methi and give a quick stir. Add little water to make Aloo gobi dry and medium amount of water to get Aloo Gobi gravy. Even for making Aloo Gobi gravy, you should not add more water. It will not taste good. The masala will not get blended with Aloo and Gobi if you add more water.



12. Taste and salt and chilli powder if required in this stage and mix well for few minutes.

13. Switch off once you get the required consistency.

14. Garnish with coriander leaves.





Now your tasty and yummy Aloo Gobi Masala is ready to serve. If you are not missing any of the above listed ingredients, I am sure you will get Aloo Gobi in Restaurant style. Enjoy Aloo Gobi Masala with rice, chapathi, poori. I have tasted this Aloo gobi masala with chapathi and rice with curd. It tasted very well.
