Urad Dal Recipes - Split Black Urad Dal rice | Ulutham Paruppu Sadham:


'Ulutham Paruppu or Uluntham paruppu'  are the names to call Urad dal in Tamil. Urad dal is a very healthy pulse widely used in India. Ulutham paruppu sadham is a very famous Tirunelveli recipe. Urad dal should be added for kids and teenage girls exclusively. My mom prepares ulutham paruppu sadham in a very tasty way with palm jaggery and coconut. This rice would be there once a week without fail for healthy reason. It is a very good source of protein. Urad dal helps to strengthen the bones. Urad dal rice is given for young girls to avoid back bone/back pain problems later. My top favorite variety rice is Ulutham paruppu sadham. My mom mixes ellu chutney(sesame chutney), a tsp of gingelly oil, papad with this sadham. It tastes heavenly. Also, it is quite easy to prepare. Check the instructions and you will be able to judge. No side dish is needed. If you want to prepare any vegetable, aviyal is the best accompaniment for this.

Urad dal Recipes - Uluthamparuppu sadham | Urad dal rice

Ingredients:

  • Rice - 300g
  • Black split Urad dal - 75g
  • Cumin seeds - 1 tsp
  • Fenugreek seeds - 1 tsp
  • Garlic - 10 cloves
  • Palm Jaggery(Karupatti in Tamil) - 2 tbsp according to your taste
  • Grated coconut - 4 tbsp
  • Salt - As required
  • Water - 1050 ml






Instructions:


1. Dry roast urad dal till nice aroma comes. Switch off immediately. Do not roast too much. The dal will not get cooked well.


                                            

2. Dry roast cumin seeds and fenugreek seeds and keep it aside.

3. Rinse the rice and urad dal.

4. Take a pressure pan. Add rice, urad dal and all other ingredients including water. 






5. Pressure cook for 3 high whistles and keep it in simmer for 5 minutes. Switch it off.

Your urad dal rice/Ulutham paruppu sadham is ready to serve. Quite easy, right?







Notes:

1. Though it is very tasty and looks yummy if we use split black urad dal, you can aslo you split white urad dal. But, the black one is the best.

2. You can add jaggery or sugar(least preferred) if you do not have palm jaggery(karupattin in Tamil).

3. Palm jaggery is just added for sweetness. Palm jaggery is very good for health too.

4. You can omit palm jaggery and coconut. But you will miss the heavenly taste.

5. Tastes best with ellu chutney(sesame chutney), papad and gingelly oil. Having the urad dal rice with curd mixed will also be very tasty.
