Sounds good, right? The another travel friendly recipe I like is, chapathi and tomato onion or tomato side dish. But, making chapathi is time consuming especially when we are in hurry. So, this fried coconut chutney is a perfect pick for travel. We call it as travel chutney. I not only prepare it for travelling, I prepare it to take a break from routine chutney recipes. My whole family loves the taste of fried coconut chutney. Ok. Let us see the recipe of fried coconut chutney now. You can even pack this chutney for lunchbox also as a side dish for idli or dosa. It is a great accompaniment for Idli and Dosa. It tastes good with curd rice too.

Fried Coconut Chutney Recipe

Easy Fried Coconut Chutney Recipe for Idli and Dosa

Ingredients:

  • Coconut grated - 100g
  • Red Chilli - 2 or 3 according to your taste
  • Tamarind - size of 2 peanuts 
  • Salt - As required
  • Oil - 2 tsp
  • Mustard seeds - 3/4 tsp
  • Urad dal seeds - 3/4 tsp
  • Curry Leaves - Few
  • Hing - A pinch

Instructions:


1. Heat 2 tsp of oil in a pan.

2. Add mustard seeds and allow it to splutter.

3. Add urad dal, curry leaves, hing and red chillies. Saute well till the urad dal turns golden brown color.






4. Add grated coconut now. Saute till the raw smell of coconut leaves and nice aroma comes.






5. Switch off the stove and allow the fried coconut chutney ingredients to cool down.

6. Once they cool down, put them in a mixer. Add salt, tamarind and grind to a chutney consistency with little water.





Your fried coconut chutney is ready now. It is so simple and you can even pack it for lunchbox too.

Notes:


1. If you are preparing this chutney for travel, it is must to fry the coconut.

2. You can add a tbsp of fried gram(pottukadalai in tamil) if you are going to have immediately. For travel or lunchbox packing, avoid adding the fried gram.

3. Once you complete the travel, if the fried coconut chutney is good enough, keep it in refrigerator immediately and you can consume it later.
