Tamarind Curry Recipe - Sundakkai Vatha Kulambu/Vatha Kuzhambu Recipe

I prepared Vatha kulambu for the lunch last weekend. It came out very well as usual. I just wanted to share the Vatha kulambu recipe. This is a very popular recipe in Tamil Nadu. Vatha Kulambu takes place in the lunch menu in most of the marriages. I love it very much for its sweet and spicy taste. If you have Puli kulambu podi ready at home, making vatha kulambu or puli kulmabu is not at all a big deal. You can add Sundakkai Vathal(Turkey Berry) or Manathakkali(Black NightShade)to prepare Manathakkali kulambu.

Sundakkai Vatha Kulambu/Vatha Kuzhambu Recipe


Ingredients:


Sundakkai/Turkey Berry - 1 tsp
Jaggery Powder - 1 tsp
Turmeric powder - 1/4 tsp
Salt - As required
Tamarind - One lemon sized

To Temper:

Gingelly oil - 30 - 50 ml(More oil, more tasty)
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Curry leaves - Few
Bengal Gram - 1 tsp
Ground nuts - 1 tsp


To Grind:

Small onions - Handful
Garlic - 2 cloves


Preparation:

1. Add the 'To Grind' items with required water and grind in a mixer to a fine paste.


2. Heat oil in a pan (you can use any oil but gingelly oil tastes best). 
3. Add and fry the 'To Temper' items one by one.



4. Add the paste, little water and fry in low flame for two minutes.


5. Cover and cook for 3 more minutes. Check now and then so that it will not stick to the pan.


6. Add turmeric powder, tamarind juice extracted from tamarind(50 ml), salt, Jaggery powder and 200 ml water.

7. Cook in low flame for 10 - 20 minutes till it turns to a gravy consistent.

8. Switch off the stove and garnish with curry leaves.
