Hello friends,

I would say Rava Kesari is the most simple sweet recipe which be a helping hand when I have guests at my home. Even i make Rava Kesari as frequent as possible to give it to my kid since it has the goodness of Rava/Sooji. My kid and hubby does not like Rava Upma. Hence I make either Rava payasam/Sooji payasam or Rava Kesari. This is my first recipe I have tried in my childhood and wrote in my own cookbook.

Ingredients:

Rava/Sooji/Semolina - 1 cup
Sugar - 1 cup
Water - 3 cups
Ghee - 1/4 cup
Cashewnuts - 10
Cardomom - 3
Food Color powder - A pinch

Optional:

Raisins - 6

Note : 1 cup -125ml here. Serves 2 - 3

Preparation:

1. Roast Rava if it is not a roasted one.

2. Heat water in a pan in medium flame and add your favorite food color powder(yellow/orange) and crushed Cardomom. 

3. Let the bubbles start coming. Keep the stove in low flame now. Add Rava little by little with continuous stirring and no lumps formed. Stir well till the Rava is cooked and starts thickening. Add additional food color powder if required, sugar, ghee, raisins and give a quick stir and switch off the stove.



3. Heat ghee in a pan and fry cashews till it turns to golden brown color. Add it with the Rava kesari.




Serve it hot.

You can drizzle ghee to the Rava Kesari while serving. You can add your favorite essence to give nice flavor to the Rava kesari.
